Manageability – Like… totally easy man…
4/20 is upon us. And there are many ways to celebrate this (literally) high holiday. If you’re like me, you probably only dollop in the green arts and you’re not a full-blown smoker, so you want a delicious treat that will get you THERE, but not THERE-There. Like… 70% there. For that, my buds (haha), I submit to you the Life, Love, and Sugar’s Nutella Cupcakes. Plus some THC-infused fun to make it extra special.
The last thing you want to do on this relaxing day like today is a ton of baking and cooking, and that’s why I picked cupcakes. Again, they’re an easy thing to make and they look like they were much harder. This recipe provides for a sweet, hazelnut-flavored cake that is light and airy, and brings you tons of icing. Tons of icing is great in this case, because that’s where I provided some THC-infused Nutella to give it a little umph. I ended up making 12 cupcakes, which (at a little under 10 mg per cupcake) was probably too many. I ended up having to eat three cupcakes just to get my buzz . I don’t even care if it’s your eighth birthday, 3 cupcakes is a lot. If you want to follow this recipe and these ingredients (100 mg of THC Nutella), maybe make half the amount of frosting with solely THC Nutella and strap yourself in for a Willy Wonka-boat ride of a night.
Also the little chocolate leafs are freaking cute, right?. Amazon for the mold, and it’s just melted chocolate chips. Now it’s time for munchies and Temptation Island. Happy 4/20 everyone!
Ingredients
NUTELLA CUPCAKES
- 1 2/3 cups (217g) all purpose flour
- 1 cup (207g) sugar
- 1/4 tsp baking soda
- 1 tsp baking powder
- 3/4 cup (168g) salted butter, room temperature
- 1/2 cup (160g) Nutella
- 3 egg whites
- 1 tsp vanilla extract
- 1/2 cup (120ml) sour cream
- 1/2 cup (120ml) milk
NUTELLA ICING
- 1/2 cup (112g) salted butter
- 1/2 cup (95g) shortening
- 4 cups (460g) powdered sugar
- 1/2 cup (160g) Nutella OR 1/2 cup of … other Nutella
- 2 tbsp (30ml) water
- additional Nutella, for garnish
- 5–6 strawberries, sliced for garnish, if desired
- Other munchies as required
Instructions
- Preheat oven to 350 degrees.
- Whisk together flour, sugar, baking soda and baking powder in a large mixing bowl.
- Add butter, Nutella, egg whites, vanilla, sour cream and milk and mix on medium speed until smooth.
- Fill cupcake liners a little more than half way.
- Bake 19-21 minutes or until a toothpick inserted comes out with a few crumbs.
- Remove cupcakes from oven and allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.
- While cupcakes cool, make icing. Mix butter and shortening together until smooth.
- Add 2 cups of powdered sugar and mix until smooth.
- Add Nutella and 1 tbsp water, mix until smooth.
- This is also where you add THC Nutella, if desired
- Add remaining powdered sugar and 1 tbsp water and mix until smooth.
- Ice cupcakes.
- Warm up about 1/4 cup of Nutella (for garnish, if desired) for about 15-30 seconds, until pourable, and drizzle over cupcakes. Add a slice of strawberry, if desired.
